Thanks for stopping by my kitchen. With fall just around the corner the tomatoes are just about done in the garden so Jim and I are taking advantage of these wonderful treats and enjoying them as much as possible. Below is my recipe for my tomato/onion salad. Give it a try and let me know how you like it.
Tomato/Onion Salad
3-4 medium size tomatoes
1 small onion
onion and garlic powdered
salt and pepper
thyme
sugar
italian seasoning
apple cider vinegar
canola oil
Clean, cored and chop the tomato. Peel and thinly slice the onion and pull rings apart and add to tomatoes. Season with onion and garlic powder, salt and pepper, and thyme. Add 1/3 cup of sugar (more can be added if you want it sweeter). Add 1/4 cup of the oil and 1/2 cup of vinegar. Toss together and taste to see if more seasoning, sugar, vinegar or oil is needed. I make mine on the sweet side, but it still has a little bite from the vinegar. Chill for about an hour and serve. You will have a lot of juice which Jim and I love to dip good, crusty Italian bread in.
