Hannakkak Supper

Hi Everyone,

Yes, it has been a while since posted on my kitchen blog.  But I do have some things to share with all of you.

Today is the first day of Hannakkak and I made our Hannakkak supper which included the following;  potato latkes, homemade caramelized applesauce, sour cream and orange baked Haddock with green and red peppers. We really enjoyed it.  Below our the recipes that I used:

Potato Latkes

3 extra large potatoes; peeled, cleaned and shredded
2 onions peeled and finely chopped
2 large eggs
2 tablespoons of lemon juice
2 teaspoons of minced garlic
salt and pepper to taste

Take the shredded potatoes toss with lemons.  Add all the other ingredients and mix well.  In a hot skillet add oil (about a cup).  Get the oil hot and drop by tablespoon the potato mixture, fry on both sides till golden brown.  Serve hot with caramelized applesauce and/or sour cream

Caramelized Applesauce

6-8 apples ( I use MacIntoch)
1 - 1 1/2 cups of Orange Marmalade
1 cup of orange juice
1/2 of sugar.
lemon juice

Peel and thinly slice apples and soak in water and lemon juice.  Mix the orange marmalade, orange juice and sugar in a sauce pan.  Bring to a boil, boil 3-4 minutes.  Drain apples and add to the orange/sugar mixture and cook on simmer, 10 -12 minutes or until apples are tender/soft.  Mash and let cool, refrigerate until ready to serve.  Serve with potato latkes.


Orange Baked Haddock

Haddock fillets
orange juice
olive oil
green and red pepper strips
salt and pepper to taste

Place Haddock fillets in a oiled baking dish.  Pour desired amount of oil and orange juice over the fillets. Sprinkle with salt and pepper.  Add pepper strips.  Cover and bake at 375 degrees 40 minutes and about 15 minutes uncovered.  Serve hot.
