Turkey Soup Recipe

Hi Everyone,

I just posted on my parlor blog that I was going to post a soup recipe here on my kitchen blog.

Turkey Soup

Leftover gravy
Ground turkey
Finely chopped spinach
Finely chopped Fontinella Cheese
Macaroni

Heat leftover gravy.  In a food processor grind turkey, spinach, and cheese.  Add to gravy and heat.  Add water and chicken base powder.  Cook and drain macaroni and add to gravy and turkey mixture.  Serve hot.  It is so savory and delicious, especially on a cold day.

Hannakkak Supper

Hi Everyone,

Yes, it has been a while since posted on my kitchen blog.  But I do have some things to share with all of you.

Today is the first day of Hannakkak and I made our Hannakkak supper which included the following;  potato latkes, homemade caramelized applesauce, sour cream and orange baked Haddock with green and red peppers. We really enjoyed it.  Below our the recipes that I used:

Potato Latkes

3 extra large potatoes; peeled, cleaned and shredded
2 onions peeled and finely chopped
2 large eggs
2 tablespoons of lemon juice
2 teaspoons of minced garlic
salt and pepper to taste

Take the shredded potatoes toss with lemons.  Add all the other ingredients and mix well.  In a hot skillet add oil (about a cup).  Get the oil hot and drop by tablespoon the potato mixture, fry on both sides till golden brown.  Serve hot with caramelized applesauce and/or sour cream

Caramelized Applesauce

6-8 apples ( I use MacIntoch)
1 - 1 1/2 cups of Orange Marmalade
1 cup of orange juice
1/2 of sugar.
lemon juice

Peel and thinly slice apples and soak in water and lemon juice.  Mix the orange marmalade, orange juice and sugar in a sauce pan.  Bring to a boil, boil 3-4 minutes.  Drain apples and add to the orange/sugar mixture and cook on simmer, 10 -12 minutes or until apples are tender/soft.  Mash and let cool, refrigerate until ready to serve.  Serve with potato latkes.


Orange Baked Haddock

Haddock fillets
orange juice
olive oil
green and red pepper strips
salt and pepper to taste

Place Haddock fillets in a oiled baking dish.  Pour desired amount of oil and orange juice over the fillets. Sprinkle with salt and pepper.  Add pepper strips.  Cover and bake at 375 degrees 40 minutes and about 15 minutes uncovered.  Serve hot.

African Violets in the Kitchen

Hi Everyone,

Welcome to my kitchen.  I just wanted to take a minute and share the beautiful violets that I have on my kitchen window sill.  I received these beautiful flowers over a year ago from a little boy I had in my pre-school class at the daycare I worked at.  When I retired he gave them to me.

They have outgrown the original pot they were in and are growing out of this pot as well.

A Marriage Made in the Oven

Hi Everyone,

I know it has been a while since I posted on my kitchen blog, but I want to share with you what we had for supper tonight.  I called it "A Marriage Made in the Oven" because I roasted a stuffed chicken that I wrapped with bacon and basted it with chicken broth and orange juice.  My family loved it and the chicken was tender and moist.  Below is the menu:

Bacon Wrapped Stuffed Chicken
Orange Juice and Chicken Broth Gravy
Mashed Potatoes
Red and Green Pepper Stuffing
Corn
Cranberry Sauce

Dessert
M & M cookies
Autumn Pumpkin Spice Danish

Cooking in the Kitchen

Hi Everyone,

Thanks for stopping by my kitchen.  With fall just around the corner the tomatoes are just about done in the garden so Jim and I are taking advantage of these wonderful treats and enjoying them as much as possible.  Below is my recipe for my tomato/onion salad.  Give it a try and let me know how you like it.

Tomato/Onion Salad

3-4 medium size tomatoes
1 small onion
onion and garlic powdered
salt and pepper
thyme
sugar
italian seasoning
apple cider vinegar
canola oil

Clean, cored and chop the tomato.  Peel and thinly slice the onion and pull rings apart and add to tomatoes.  Season with onion and garlic powder, salt and pepper, and thyme.  Add 1/3 cup of sugar (more can be added if you want it sweeter).  Add 1/4 cup of the oil and 1/2 cup of vinegar.  Toss together and taste to see if more seasoning, sugar, vinegar or oil is needed.  I make mine on the sweet side, but it still has a little bite from the vinegar.  Chill for about an hour and serve.  You will have a lot of juice which Jim and I love to dip good, crusty Italian bread in.

Entertaining Angels! What is Hospitality?

Hi Everyone,

How is everyone today?  I hope all are fine and doing well.  We are doing fine here in Vandergrift, Pennsylvania.  Sometimes when I am reading other blogs they so inspire me and that is what I am going to do today.  First a question and then a couple of answers.

What is hospitality?

According to Mr. Webster, hospitality is:

"The act or practice of receiving and entertaining strangers or guest without reward, or with kind and generous liberality."

Great definition Mr. Webster.

Now let's look at what the Bible has to tell us about hospitality.

Hebrews 13:2

"Be not forgetful to entertain strangers: for thereby some have entertained angels unawares."

So the scriptural definition of hospitality is when you entertain those who have come for a visit, whether you know them or not and well you treat them.

I would like to think that when you all visit my blog, you are angels that have come to visit.  I hope and pray that I have treated you special because that is my intent.  You are all angels to me.  Please always feel welcome.  I am glad you stopped by for a visit.  Come any time.

Dinner with Jimmy

Hi Everyone,

We just finished having dinner with our son Jimmy.  He gets off work at 4:00 and his wife doesn't get of till 5:30 so on Wednesdays he has dinner with us and his wife has dinner her family because they live closer to church.  Then we all meet at the church.  This was something the kids decided on their own.  They often have dinner with us or with Brittany's parents on Sundays and sometimes they want to have dinner just the two of them.

Tonight we had:

roast chicken
au gratin potatoes with extra cheese
tossed salad with my homemade italian salad dressing

The guys enjoyed the dinner which makes me happy.  I love to cook and bake and it make the job a lot easier and more enjoyable when those you cook and bake for truly appreciate it.

Well we will be off to church here shortly.  Wednesdays are Bible study and Pastor Skelly is teaching the book of James which is really great.

A New Recipe

Hi Everyone,

Today I thought I would share a recipe with you that I hope will truly encourage you.  One of the best foods that you can eat is fruit and vegetables.  They are full of all the good things that our bodies needs.  Yes, we need grains and protein also but I thought what I would recommend today is fruit.  Only this fruit is spiritual fruit.

Galatians 5:22-23

"But the fruit of the Spirit is love, joy, peace, longsuffering, gentleness, goodness, faith, meekness, temperance; against such there is no law."

 These verses are great and I need reminded about them all the time.  I fall short everyday.

New Recipe for Meat Balls

Hi Everyone,

I know it has been a quite a few days since I last post here on y kitchen blog.  I just had to write to all of you before another day goes by.  This past Wednesday I tried something new.  I had been thinking about since I was in CA back in February and I just did.  I call them Bacon Wrapped Meatballs.  My guys loved them

Here is the recipe:

Bacon Wrapped Meatballs

2 lbs. of ground turkey
1 egg
1/4 c. of milk
1/2 c. Italian Seasoned Breadcrumbs
1 tps. of the following seasons:
     garlic powder
     onion     "
     sea salt
     pepper
     cilantro
     thyme
     basil
     oregano
3/4 lb. of bacon (cut in 1/2)

Mix all of the ingredients together except for the bacon.  Roll the turkey mixture in to large meatballs and then wrap with a 1/2 slice of bacon.  Insert a toothpick to hold the bacon in place.  Place in a glass baking dish and bake for 1 hour at 400 degrees.

They can be served plain or with any desired sauce for dipping.

They are delicious, like I said my guys loved them.

Tomorrow: Resurrection Sunday

Hi Everyone,

Yes tomorrow is Resurrection Sunday.  I look forward to this very special day as I remember the resurrection of my Lord and Savior Jesus Christ.  I also look forward to the special time in church and we praise and worship the Lord Jesus.  It is always good to be in the House of the Lord worshiping, learning, and fellowshipping with my brothers and sisters in the Lord.

Tomorrow after church we will gather with family, have a special Easter meal and just spend some special time with our family.

We will have potato salad, ham, pickled beets and eggs, baked beans, and deviled eggs.  If you want to try some new in your potato salad use Marzetti's Cole Slaw dressing.  It gives it a special zing and it is delicious.  I also added it to my filling for the deviled eggs.

Well I pray everyone has a blessed Resurrection Sunday.

Tea on Tuesday

Hi Everyone,

I have been visiting some blogs that celebrate tea.  I have enjoyed tea since I was a little girl.  Mom never sent us to school unless we had our tea with our breakfast.  Then when I was older and walked home for lunch, she always had tea waiting for me to have with my lunch.  I have grown to love many different teas and one of my favorites is Earl Grey.  I love the aroma and the taste is divine.  I always use sugar and cream.  However when I was visiting my daughter last month there were some teas that I enjoyed without cream.

Today's tea for me is Earl Grey.  I hope all of you enjoy my pictures that I have posted.

Let me say as we draw closer to this coming Sunday I pray all of you have a blessed Easter holiday as we remember what our Savior Jesus Christ did for us.  Let us celebrate together Resurrection Sunday.

Snowy Monday

Hi Everyone.

I just had to post tonight.  I have been visiting some of the blogs that I follow and let me say the teas that everyone is holding are just so wonderful.  I have learned how to do the linking thing so if anyone can teach I would really appreciate it.  It is nice reading all about the teas and seeing the different tea sets that everyone shows.  I also enjoy the many other pictures that you show as well.

New Tea Cup Pin Cushions

Hi Everyone,

I have been busy creating and have also started moving back down to my craft room.  The weather seems to be getting better and is not so cold down in the craft room.  I have made some more tea cup pin cushions as well as tea spoon pin cushions.  I have also join another swap site and have been doing some swaps with them.  They are very creative people and I love seeing all of the creations.

Back from California

Hi Everyone,

I am finally back from California.  What a great time I had with my daughter and her family.  It was so much fun and I want to share some of the things we did while I was there.  We did crafts with the girls, had a tea party and sewed aprons with the girls.

Also since I have been home I have done some crafting and creating myself that I would like to share as well as show you my latest piece to add to my Solvang collection.  I just can't go to California without making a stop in Solvang.  They have the cutest stores.

Tea Pots and Cups

Hi Everyone,

It has been a while since I checked in.  I hope all of you had a great Christmas and a Happy New Year.  Ours was quiet but very enjoyable.  During the holidays I did visit a couple of thrift stores, my favorite place to shop for those unique tea cups and tea pots.  While shopping I found some very unique tea pots and a tea cup and saucer.  I was also able to find a set of dishes that I love.  They are very simple.  I would call them a pink country and pink is my favorite color.

With some of the other items, miss matched plates, glasses and a tea pot I was able to make a three tier server.  One other thing was a Valentine mug and I already had a single saucer.  I matched the two up and made a Valentine mug pin cushion.

I will be posting pictures of these as soon as I finish this post.
